High-Calorie Almond Butter and Banana Overnight Oats

Method

  1. Mash half the banana in a jar or bowl until mostly smooth.

  2. Stir in the almond butter and 3 tablespoons of the milk until it loosens up.

  3. Add the oats, chia seeds, cinnamon, salt, and the rest of the milk. Stir well.

  4. Put the lid on and leave it in the fridge for at least 6 hours, or overnight.

  5. In the morning, give it a good stir. Splash in a little milk if it's too thick.

  6. Slice the other half of the banana on top and add an extra spoon of almond butter if you like.

  7. Eat it cold, or microwave it for 60 to 90 seconds if you prefer it warm.

Chef's tip

Make 3 jars on Sunday night and keep them in the fridge for up to 3 days. Leave the banana slices off until the morning, or they'll turn brown and mushy.
