Strawberry Protein Yogurt Bark

Method

  1. Line a baking sheet with parchment paper.

  2. Add the yogurt, protein powder, honey and vanilla to a bowl.

  3. Whisk until smooth with no powder lumps.

  4. Pour onto the parchment and spread into a layer about 1 cm thick.

  5. Scatter the chopped strawberries over the top.

  6. Sprinkle on the chia seeds and press everything in gently.

  7. Drizzle with melted chocolate if you’re using it.

  8. Freeze flat for at least 3 hours, until fully firm.

  9. Let it sit for 2 minutes, then break into 12 pieces.

  10. Store in a sealed container in the freezer.

Chef's tip

Pat the chopped strawberries dry with a paper towel before topping. Extra juice makes the bark icy, and a dry berry keeps the texture creamy.
