Peanut Butter Honey Protein Pancakes with Hemp Seeds
Big, fluffy pancakes that hit almost 1,000 calories and 57 g of protein without tasting like a gym supplement. Perfect when you're trying to eat more but breakfast always feels too small.

Method
Mix the oat flour, protein powder, baking powder and salt in a bowl.
Add the egg and milk, then stir until just combined. A few lumps are fine.
Let the batter sit for 3–4 minutes so it thickens a bit.
Heat a pan on medium-low and melt the butter.
Pour about 1/4 cup of batter per pancake.
Cook 2 minutes until bubbles form, flip, then cook 1–2 minutes more.
Warm the peanut butter for 10 seconds in the microwave so it drizzles.
Stack the pancakes, pour over the peanut butter and honey, and sprinkle the hemp seeds on top.
Chef's tip
Make a double batch on Sunday, stack the pancakes with parchment paper between them and freeze them. Toast two in the morning, add the toppings fresh, and breakfast is ready in 3 minutes. If you're cutting, drop the peanut butter to 1 tbsp and swap the honey for fresh berries.
