Green Goddess Stir Fry
This stir fry is a go-to for me when I want a quick, filling meal that's also really good for me. It's packed with protein and veggies, and it's ready in about 25 minutes, which is perfect for a busy evening.
Ingredients
- 1 cup firm tofu, cut into small cubes
- 1 cup brown rice
- 1 tablespoon olive oil
- 2 cups mixed veggies like broccoli, carrots, and bell peppers
- 2 cloves garlic, minced
- 1 cup edamame
- 1 teaspoon soy sauce
- salt and pepper
Instructions
Start by cooking your brown rice according to the package - it usually takes about 15-20 minutes, so get that going first.
In a large skillet or wok, heat the olive oil over medium-high heat and add the tofu, cooking until it's golden brown on all sides, about 5 minutes.
Add the mixed veggies, garlic, and edamame to the skillet, and cook until the veggies are tender but still crisp, which should take about 5-7 minutes - just be sure to stir frequently so nothing burns.
Season with soy sauce, salt, and pepper to taste, then serve the stir fry over the cooked brown rice.
I usually buy pre-cut mixed veggies to save time on chopping, which makes this recipe even quicker to throw together.
