Grilled Chicken Bowl
This is one of those meals I make when I want something filling but not heavy after a morning workout. It takes about 25 minutes and keeps me full for hours, which is perfect for a busy day ahead.
Ingredients
- 2 chicken breasts (about 300g)
- 1 cup brown rice
- 1 tablespoon olive oil
- 2 cups broccoli florets
- 3 garlic cloves, minced
- salt and pepper
Instructions
Season the chicken with salt, pepper, and garlic. Let it sit for 5 minutes to absorb the flavors.
Grill the chicken in a non-stick pan with olive oil for about 5-6 minutes per side, or until it's cooked through.
While the chicken is cooking, steam the broccoli florets in a separate pot for 3-4 minutes until they're tender but still crisp - I like to add a bit of water to the pot to get the steaming going quickly.
Cook the brown rice according to the package instructions, which usually takes about 10-12 minutes, then assemble everything in a bowl once the chicken is done
I usually cook extra rice on Sundays so this comes together even faster during the week, and I also prep my veggies the night before to save some time in the morning.
