Spicy Citrus Grilled Chicken Breast with Brown Rice
This is my go-to plate after a hard workout — juicy grilled chicken with a spicy citrus kick, served over brown rice. Simple, filling, and way better than another protein shake.
Method
Mix lime juice, olive oil, garlic, chili powder, paprika, and cumin in a bowl.
Add chicken breasts and coat well. Let it sit for at least 20 minutes.
Rinse the brown rice under cold water, then add to a pot with 2 cups water.
Bring rice to a boil, then cover and simmer on low for 25 minutes.
Heat a grill pan or outdoor grill to medium heat.
Grill chicken for 6-7 minutes per side, until fully cooked through.
Let chicken rest for 5 minutes, then slice it.
Fluff the rice with a fork and scoop into bowls.
Top with sliced chicken, fresh cilantro, and a lime wedge.
Serve warm right after your workout.
Chef's tip
If you're cutting, swap the rice portion down to 1/2 cup cooked and add a side of steamed broccoli to keep the plate filling without extra carbs.
