Garlic Butter Steak Bites with Sweet Potato Fries
This is my go-to after a hard gym day — juicy garlic butter steak bites with crispy sweet potato fries, ready in about half an hour, no protein shaker required.
Ingredients
- 1 lb sirloin or ribeye steak, cut into 1-inch cubes
- 2 medium sweet potatoes, cut into fry-shaped strips
- 2 tbsp olive oil
- 3 tbsp butter
- 4 cloves garlic, minced
- 1 tsp smoked paprika
- 1/2 tsp salt (for potatoes) + extra for steak
- 1/2 tsp black pepper
- 1 tbsp fresh parsley, chopped
- 1/2 tsp onion powder
Instructions
Preheat oven to 425°F and line a baking sheet with parchment paper.
Toss sweet potato strips with olive oil, smoked paprika, onion powder, and salt on the sheet pan.
Spread the fries out in a single layer so they don't steam, then roast for 25 minutes, flipping halfway.
While fries roast, pat steak cubes dry and season with salt and pepper.
Heat a large skillet over high heat until it's really hot, no oil needed if using a good cast iron pan.
Sear steak bites for 2 minutes without moving them, then flip and cook another 1-2 minutes for medium doneness.
Lower the heat, add butter and minced garlic to the pan, and spoon the melted garlic butter over the steak for 30 seconds.
Pull steak off the heat immediately so it doesn't overcook in the residual pan heat.
Plate steak bites next to the crispy sweet potato fries and sprinkle with fresh parsley.
Serve right away while the steak is still juicy and the fries are still crunchy.
If you're bulking, add a second sweet potato and a tablespoon more butter for extra calories. If you're cutting, swap half the sweet potato for roasted broccoli and skip the extra butter drizzle at the end.
