One-Pan Salmon with Roasted Sweet Potato & Green Beans
This is one of those meals I make when I want something filling but not heavy after a workout. It takes about 25 minutes and keeps me full for hours, plus it's really easy to make in just one pan.
Ingredients
- 4 salmon fillets (about 120g each)
- 2 large sweet potatoes, peeled and cubed
- 2 cups green beans, trimmed
- 2 tablespoons olive oil
- salt and pepper
Instructions
Preheat your oven to 400°F (200°C) and line a big baking sheet with parchment paper.
Toss the sweet potatoes with a bit of olive oil, salt, and pepper on one side of the baking sheet, and the green beans on the other side - they'll roast in about 15-20 minutes, or until the sweet potatoes are tender.
While the veggies are roasting, season the salmon fillets with salt and pepper, and when the veggies have about 5 minutes left, place the salmon on the baking sheet with them - it cooks really quickly, just 5 minutes or so, depending on how thick your fillets are.
After everything is cooked, serve it all together - the salmon, sweet potatoes, and green beans - it's a really satisfying post-workout meal
I usually buy frozen green beans and thaw them in the fridge overnight, so they're ready to go when I need them - it's a big time saver on busy mornings.
