Cheesy Beef and Rice Meal Prep Bowls
This is the bowl I make every single week when I'm trying to actually gain size without feeling like garbage — cheesy, filling, and it holds up great in the fridge for days
Method
Heat the olive oil in a large skillet over medium heat.
Add the diced onion and cook for 3 minutes until soft.
Add the garlic and cook another 30 seconds, just until fragrant.
Add the ground beef, breaking it up, and cook until browned, about 6-7 minutes.
Drain off any extra grease if there's a lot.
Stir in the chili powder, cumin, smoked paprika, salt, and pepper.
Add the corn and black beans, stir, and let everything cook together for 5 minutes.
Divide the cooked rice into your meal prep containers.
Top each container with the beef mixture.
Sprinkle cheese evenly over each bowl while the beef is still hot so it melts.
Let cool slightly before sealing containers, then refrigerate.
Reheat in the microwave for 2 minutes when ready to eat, topped with green onion.
Chef's tip
If you're bulking hard and need more calories, swap the rice for the same amount cooked but stir in a tablespoon of butter per bowl before topping with the beef — cheap way to add clean calories without changing the flavor.
