Chia Seed Pudding with Mixed Berries and Walnuts

Method

  1. In a glass jar or medium bowl, whisk together the chia seeds, almond milk, vanilla extract, and maple syrup.

  2. Let the mixture sit on the counter for 5 minutes, then give it another good stir to break up any seed clumps.

  3. Cover the jar and place it in the fridge for at least 4 hours, or preferably overnight, until thick and creamy.

  4. In the morning, take the pudding out and give it one final stir.

  5. Top the pudding with the fresh wild berries and the chopped walnuts right before serving to keep the crunch.

Chef's tip

If your pudding feels too thick in the morning, just splash in one extra tablespoon of almond milk and stir it through to loosen the texture.
